#EATFIT with Elise
Say hello to your newest favourite treat: Healthy Snickers Fudge! This recipe by Elise at Balance By Elise, tastes so naughty, you’ll find it hard to believe that it is refined sugar-free and made of 100% wholefood ingredients! Plus, as an added bonus, this fudge is gluten and dairy free! This recipe is a MUST try!
Serves 8 large or 12 small pieces
Ingredients:
- ½ cup pitted dates, soaked in hot boiling water for 15 minutes then discard water
- ½ cup natural peanut butter
- ¼ cup coconut oil, melted
- 1 tsp vanilla extract
- 1 heaped tbsp honey
- 2 tbsp cacao powder
- Pinch of salt
- ¼ cup warm water
- For topping: chopped peanuts, melted dark chocolate and extra peanut butter
Method
- Add all ingredients, except for the water, to a food processor or blender and blend.
- As it is blending, slowly add in the warm water until the mixture is smooth and combined.
- Transfer mixture into a silicone or lined baking tray and spread out evenly, about 1cm thick.
- Place in the freezer for minimum 3 hours to set (overnight is best).
- Once set, remove from the freezer, slice and drizzle over melted chocolate, peanut butter and a sprinkle of chopped peanuts.
Storage: store in the freezer for up to one month (but trust me, it will not last this long!). You can eat this fudge straight from the freezer or allow it to defrost at room temperature for 5-10 minutes before eating.

Before she starts work, she always begins her day with some form of exercise - some days it is a weight training session, others it is a more gentle pilates workout or yoga flow.
Then in the afternoons, she loves to get outside and take her dog for a walk or get on the tennis court to play a couple sets. Being a past competitive tennis player, getting out on court would have to be one of Elise’s favourite ways to keep FIT.
