#EATFIT with Dianna

This delicious Rocky Road recipe by Dianna (@diannayota) is a healthier alternative to your favourite childhood treat! It is simple to make and can easily be modified to include your own combination of ingredients. Perfect for gifts or as a sweet treat to end your day.

Ingredients

  • 3/4 cup of cacao powder (Dianna uses @happywayau)
  • 130g cacao butter
  • 60g coconut oil
  • 6 tbsp pure maple syrup
  • 40g mini marshmallows
  • 50g diced Medjool dates
  • 30g diced dried mango
  • 6 sugar free choc chip biscuits (chopped into chunks)
  • Popcorn (handful to place on top)
  • 35g chopped raw cashews
  • 2 pinches of sea salt
  • 6 squares of white chocolate (Dianna uses @loving_earth) + 1 tsp of coconut oil (for white chocolate drizzle).

 

Method

  1. Melt cacao butter & coconut oil together, then add maple syrup, cacao powder and salt, stirring until smooth.
  2. Add all other ingredients in except 2 biscuits, popcorn and choc drizzle ingredients. Mix together then pour into a lined container.
  3. Add remaining biscuits and popcorn in top, covering a few pieces with the chocolate. Then drizzle white chocolate on top and place in the fridge for 1.5 - 2 hours.
  4. Cut into bars and enjoy!!
