#EATFIT with Sarah Cooper
Find yourself snacking more whilst at home in isolation? Snack the RIGHT way with this delicious and exclusive Dark Choc & Ginger Cookie recipe created by Sarah Cooper from ScoopItUp.
Ingredients
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 cup almond meal
- 1 heaped tbsp coconut flour (or more almond meal)
- 1 egg
- 1 heaped tsp tahini
- 1 tbsp olive oil
- 1 handful freshly grated ginger
- pinch salt
- chunks dark choc - measure with your heart I use 90% Lindt
Method:
- Mix together well and add a splash of dairy free milk or more tahini if it is too dry
- Roll into balls and slightly flatten on lined baking tray
- Bake at 180 for 20 minutes or until golden. Enjoy warm.
